This plant, native to North America and also found in Europe, produces seeds containing 25% oil. Its most prized quality is its richness in linoleic acid and, to a lesser extent, linolenic acid. These are the fatty acids from which the body forms arachidonic acid, the precursor to prostacyclins, which make blood compatible with the endothelium of arteries.
These polyunsaturated acids are also necessary for the composition of cell membranes, providing them with elasticity.
